Adafruit Analog Output K-Type Thermocouple Amplifier - AD8495 Breakout [ADA1778]

Q: Hi, can somebody please tell me why there are two ground (gnd) terminals? sorry. newbie here

One ground goes with the power. The other ground is for reading the output signal. Both must be on the same circuit.

Q: I'm looking to use thermocoupler output signal to operate 12v pump at variable speeds for water injection on a diesel truck. Do you have any ideas?

this Thermocouple output board has a 0-5VDC analog output but it is not linear with temperature. It requires a formula (printed on the back) to convert volts to degC. This signal would have to be input into some type of controller circuit to be used to control any other device. it is up to you to select the appropriate controller, amplifier, and safety interlocks. You may try looking at devices called process controllers as they are designed with many features relevant to temperature control. in this case though, you will probably not need this board as most process controllers can take thermocouple inputs directly. Beware though that most process controllers are not designed for mobile applications!

Q: I would like to use these in a 12v system with an output of 0-5v do I need a different input voltage to get 0-5v output?

At any input voltage of above 5VDC (limit 18VDC), The Vout will be (0 to 5VDC) = -250°C to +750°C according to the linear equation: Temperature = (Vout - 1.25) / 0.005 V. If your input voltage is 3.3V, the output will only be 0-3.3V but since your system supplies 12VDC, you will get the full 5V range.

Q: If I decided to buy the expert installation on this thermocouple amplifier, what do you think the installer would do?

Nothing. Expert installation appears to be for computers and peripherals. This device is for measuring temperature integrated to a micro-controller board like an Arduino. Looks like offering Amazon Expert Installation is a mistake to me.
