Can the wheels be removed and not be attached at all?

Yes, you do not need to attach wheels at all. They include pieces you can use in place of the wheels for table to stay put and not damage floors or sit on carpet. I did not use the wheels. You can also switch them out, they screw into bottom of frame.

How does the height adjust?

the legs do not adjust. you can adjust the angle of the glass top.
