Grind it finer
This coffeeis a weird grind. Two fine for the French press and too course for the Chemex. The first time I used it I found the flavor very weak. One thing I love about coffee and chicory is its depth of flavor. So I put it in my coffee grinder and ground it finer. it now makes a great tasting cup of coffee, with the complex notes I love.

Dark Roast Full Flavor--and it's Decaff?!
Omg, this is my new favorite. So, I've been old for awhile and my caffeinated beverage cutoff is before 3pm or I don't sleep. I'm super picky about coffee. SUPER. PICKY. I'm talking specific brands, specific profiles, medium-dark roast, fresh ground, fresh brewed in my French press. My current favorite is Cameron's Jamaican something about mountains. It's a dark roast and has that robust in your face, yet never bitter with a flavor profile that has that needed hint of chocolateyness. But I needed something for the rest of the day once my morning cup is gone. This is it!So definitely, you don't need as much of this as a normal cup of coffee. Or you're going straight for a giant cup of espresso. The flavor is rich and profound, and just like all of my preferred coffees, it doesn't come off bitter or have that icky canned coffee taste it tastes like my fresh ground dark roast coffee! And it does give me a lovely coffee energy boost but I can still drink it and go straight to bed just like I used to with regular coffee. In fact, I have to drink as much water with this as I do with a cup of espresso or my stomach gets mad and asks me what I'm doing with my life. LolBut yeah, you're a picky coffee drinker who likes fresh ground dark roast coffee that isn't bitter? Try this, it's super amazeballs.

Coffee substitute - not a premium dark roast coffee
Chicory-blend coffee is a historical accident, born out of emergency. In the South, roasted chicory root (among other ingredients) was mixed with real coffee to stretch out supplies during periods of war, high tariffs, or just plain hard economic times. Once coffee prices dropped and supplies returned to the New Orleans docks, chicory coffee sales dropped off. However, now that we have high inflation and never-ending supply chain shortages, people are trying chicory-blend coffees once again. As to taste, that's highly personal, but keep in mind that CDM's coffee ingredient uses ordinary robusta, not premium arabica beans. It's also no accident that chicory-blend coffees are traditionally drunk with a heavy dose of 'au lait' to smooth out the taste. The vegetable simply darkens the cup and gives the illusion of a dark roast. But it's not high-end coffee. So if you're a 'picky connoisseur' looking to equal or surpass a premium single-bean estate coffee, CDM is probably not what you're looking for.

Surprised how good this coffee is..
I have never before tried any chicory coffees so this was my first. I was hunting for some decaf as my preferred brand is MIA, and this caught my eye. As always Amazon reviews can be very bipolar befuddling, but numerous reviews inspired me to take a shot, (no pun intended). My expectations were modest at best, thinking it may be bland or the flavor may be not to my taste. I was pleasantly surprised to discover this brews up *very* rich-- so much so I have had to taper my usual scoop count down. The first pot I brewed (I do pour-over) was so strong I had to heat and add more hot water after the fact. The grind is medium-fine, by my estimation. The color of the brew with milk was rich with amber tones as I would hope and produced some crema during the pour. The flavor is a little different, hard to describe- not "nutty" exactly, but in a similar sense, a "warm", pleasant kind of flavor as associated with a "nutty" palate; I assume due to the chicory. I like it enough that I will almost certainly buy this again. I also have blended with another grind to mutually enhance each with very nice results. I had read some reviews of this coffee as sold in another form (can, I think) and read several people say it was different from the previous they'd gotten and other negative observations, so I was pleased that this was not a disappointment. I prefer a moderately strong cup of coffee, medium-dark, not bitter, and this fills that bill well. And due to brewing up so intensely (again, pour-over method), I would assume it will go a little further than others that require more grind to get the right intensity.

Great classic taste - just as I remembered
Cafe du monde coffee has a very smooth bold taste - that smoothness is from the chicory. The first pot I made came out way too strong as I forgot how you have to use less grinds than normal. Once I cut it by 1/3 it came out perfect. My parents used to buy chicory coffee during WWII because as with most things, coffee was sent overseas and everyone had to make due with what they had. Chicory often was substituted for coffee and they learned to love it. We kept getting it when I was a kid and it still brings back pleasant memories. If you have a harsher coffee, just mix a little of this in and it smooths it right out. Very good flavor, body and good price.
