HIGHLAND BURGUNDY RED Seed Potatoes Highland Burgundy Red is an early main crop variety dating back to at least the 1930's. Tubers are oval or long oval and Highland Burgundy Red seed potatoes have a delicious mild, slightly sweet taste and a floury texture. The flesh is a light red colour surrounded by a white outline just under the skin and it retains this unique colour after cooking. Makes excellent novelty chips, crisps and a wonderful coloured mash. Highland Burgundy Red is a real novelty potato to produce at a dinner party and it is said to have been used by the Savoy Hotel to add appropriate colour to a meal for the Duke of Burgundy in the mid-1930's and was named in his honour. When freshly dug the skin of Highland Burgundy Red seed potatoes is a bright red colour but this becomes more russet with underlying burgundy as it seasons. It is said to resemble some of the old type potatoes which are still grown in South America.
