They fold inside the case not envelope styled. They are microfiber so I don't think thread count matters, they are very soft and comfy.

Does this material attract pet hair excessively?

Attract hair? No. My cat likes to sleep on my pillows from time to time, so there will be some fur left behind. It is relatively easy to brush off with your hand, though. So if you have pets that rest on your pillows, you should be fine with these. You’ll just want to make sure they don’t build up any static when drying them after washing.
