No, it won't. It'll be a standard black filter coffee. Crema doesn't really get formed this way, and if it does, it is usually stuck on the coffee grounds before being filtered. After filtration, it is a simple black coffee.

Can you put water in the night before or just when ready to use it.

Yes, you can put water in it the night before. Also, if you put some ground coffee in the little basket that will save those valuable moments in the morning too.

Is there an alarm once the coffee is ready?

No. and there is no heating plate to keep the coffee warm

Has anyone put hot chocolate in it?

Yes I have but for one person two heaping table spoons I have also put the milk in as if it were water. Make sure that you rinse it out immediately after hot chocolate made and do a water run as if making coffee to wash the system out, you may have to do this twice till you get cleared water ( You have to do this immediately important)
