Q: Does one color option glow green and the other blue? Or do they both glow blue?

There are 2 options to this specific product: "Blue" and "Sky Blue". I purchased the "Blue" style after purchasing the "Realistic 3D Domed Glow in The Dark Stars,606 Dots for Starry Sky, Perfect for Kids Bedding Room Gift(606 Stars) (Green)". The green ones are BY FAR better, brighter, and longer lasting than the blue option. The green glows green and the blue glows blue, but the blue doesn't get as bright or last as long. I use a black light to "charge them up" quicker, and the blue ones barely glow at all.

Q: How easy are they to take then down? I live in a rental and want to make sure it wont rip the paint. I don't mind repainting the ceiling.

Very easy had no problems, actually lose stickiness the more you change your mind. If I could figure out how to take a picture I would. I love them!

Q: Which set is more realistic...between the blue and sky blue? also, would one set be really enough and would a black light charge them the best?

Both blues are realistic, though Sky blue is the more vibrant one, and yes, a black light does charge them better. One would be enough for the ceiling of a small room, but a bigger room ( Or you want them to be more clustered together) I'd suggest two.
