Q: Hello, can I use this for sashimi please?

There is no specific legislation covering the sale of raw seafood to be consumed raw but the Government Recommendation is that it should be frozen to kill parasites harmful to human health. Although in our HACCP Scope it clearly states that our Seafood “ is to be cooked before consumption” some other suppliers will be following the recommendation of freezing the fish in order to kill any parasites and then defrosting again to sell as fresh. Whilst we can assure you that the fish we offer is fresher than most available we do not offer our fresh fish as Sashimi grade. The regulations advise that the safest way to eat sushi would be to freeze the fish to -20°c for 24 hours or -35°c for 24 hours before defrosting. With this in mind we do not advise that our fresh fish be eaten raw. Freezing and defrosting fish has become common practice at many outlets in order to keep the availability and price stable but this is not something that we have ever done nor would we want to. We pride our fish to be as fresh as possible without compromising the quality, texture or flavour.
