Super sharp and small amount of flex, good all around knife for meat prep

I bought this knife to replace it's counterpart from a 1986 set that got destroyed. This knife is not what it's counterpart was. The old knife had a nice weighted handle with some substance and heft to it that balanced the knife perfectly in your hand. The new knife's handle seems to be significantly lighter and made of nothing but plastic as far as I can tell. Same for the blade - the new knife's blade seems thinner with a lot more flex than the old knife. These differences may be OK in a $35 knife - but this knife was $90! I feel the price/value just isn't in these anymore. If another Henkel breaks I'll replace it with something less expensive.

What's to say this is a world class knife at a price that's hard to beat. Becarefull if you have cheap knives these are sharp and hold a bead. If you don't have a sharpener get one. This knife outlast you. Great for people starting out on there own.

I have many knives from this brand and they are good and stay sharp for a long time , they are wonderful. I m happy with this purchase it makes my life easy when slicing meats.

Love Henckels knives - they are the best. Nice solid handle, no way for germs or water to get in. I've had these knives since the 80's. It was just time for a new one.I only gave it a one on the Giftable scale, because I don't think you should give knives as a gift - or else it will sever your friendship - at least that is how the old wives tale goes!

I recently added this 7” Filet knife to my extensive collection of Four Star Henckels and I couldn’t be happier. I use this knife to trim meat and fish and the blade does exactly what I need it to do. With little effort I can filet trout and salmon with almost zero waste. I highly recommend adding this to your set.
