Does it work with windows 10 and 11?

No problem. I run it on windows 11 and my Mac.

Are the knobs metal or plastic ? And is there a nice cluck and button press ? Thnx.

The knobs are metal. You can buy plastic coloured ones to customise your Stream Deck. The buttons pressing make a very satisfying noise. You can press the knobs too and that makes a satisfying click. The screen is also a touch screen that functions the same as pressing the knobs.

Do the rotary knobs have distinct clicks or are they free moving ? Thnx

They have a click as they rotate. You can also push the button itself (rather than rotating it), which usually changes the mute status of whatever is being controller.

Is this good for AP functions with flightsims ?

I haven't used this for specifically flight sims. However I have used it for Elite Dangerous and Star Citizen and it works well for those. You can eve get the dials working for certain uses.
