do i need 2 adapter for 5m? coz i see low light on some parts with 1 adapter

The advert for this 5m strip states "an adapter is required" .... therefore I would doubt if you'd need 2 to run the full length. Although you would certainly need 2 if you cut and split them into two separate illuminating items, unless you subsequently connected them in some fashion.

Does the colour change or is it just white?

Just white, if u want multicoloured lights , type muti colour led RGB, LED light strip , normally come with remote control.

I have 4 rolls of 5 m and i've just bought 1 plug. can i link them all together or do i have to buy another 3 plugs. this is confusing and inaccurate

You can only add them together using a connector you can buy on Amazon - I bought e.g. Mexllex L Shape 4-pin Connectors Angle Adjustable 90-180 Degrees LED Strip Connectors for 10mm Width 5050 RGB LED Strip Lights and you can buy straight connectors but make sure you keep the polarities the same when connecting - and if the driver (make sure you bought a constant voltage one, NOT a constant current driver) you have to work them, is powerful enough. Total the power of the three rolls and make sure the driver can cope with it. Then connect the driver to the mains plug and away you go,

Redecorating our dining room and considering lightening it up with just LED strips on the ceiling, do you guys think it will provide enough light?

these strips are quite intense. by that they are bright. i have them under my shelving in my study and find them more than enough. i think basically they are ment for underneath lighting eg kitchen cabinets etc. but you can try them on your ceiling no harm. you are not exactly going to break the bank for the cost of them.
