It has a relatively high glycemic index. Much better to use stevia or Erythritol, where glycemic index is near 0.** A: Chocolate is already bitter so the stevia bitter on top is likely unpleasant. Erythritol has a cooling effect when dissolving and when used in chocolate has a waxy texture. So maybe monkfruit or some other non-laxative blend... Hershey’s tried erythritol for chocolates in the late 90s? Or early this century. But it failed in the marketplace. Though it’s great where already dissolved like ice cream. **Q: If a person can not have sugar can they have sugar alcohols?** A: I cannot have sugar and I eat the sugar free Hershey s .I am diabetic Yes I believe you can enjoy the chocolate. **Q: what does mildly sweet mean?** A: I wouldn't call it sweet. Then I bought some of these, mainly because they were on sale and because I had not tried them yet. Hershey's Chocolate, big deal right? Well that bag surprised me, they were 100% delicious! And the Hershey's are now in the top spot in my sugar free chocolate stock. Though both Russell Stover and Hershey's Dark Chocolates each have their own set of qualities that are enjoyable. I now have to have them both. 7/05/2023 Challenge: pop .5 to 1 bar in your mouth and let it melt without touching a tooth. Yes it can be done because I do them all that way. These candy bars have taught me how to really enjoy candy. For reference: I am a 5'9" male, ~165lb and on a cold day in the winter I can make one of these last ~4-5 minutes and on a hot summer night I can melt one completely inside of 2 minutes.
