Q: Can the tightening lever detach from the saw completely? Is it pretty simple to replace the blades?

The saw will come with the blade upside down. Release the locking mechanism, turn blade over install and tighten. It works fine and it easy to use.

Q: my saw blade is on the wrong side for cutting; is that how it is shipped and you are supposed to remove and reverse?

Yes, it’s shipped like that. Move the lever on the bottom of the handle and reverse it

Q: Can I saw the cattle's bone?

Yes it is very easy to saw with this saw. Only thing is I would get a smaller one as well. This one is very large.

Q: Are oem replacement blades available ?

Yes, it's a standard 25" blade with posts. You can find them online, Cabela's, Grizzly Industrial Equipment, and possibly Hobart.
