Can i plug it to my phone and play a YouTube video to make a sample

Of course, the NTS-1 has an audio out. Assuming you have the appropriate cables and some form of recording app, e.g. a DAW or sampling app, you should be able to create YouTube content or samples.

when a midi and audio source are plugged in will it output both at the same time through the headphones?

Yeah, whatever is going through the audio on will go through the main audio output.

What does this actually do?

It's a cool DIY synth project build (anyone can do it - similar to the old Radio Shack build projects). Great as a gift. The Nu:Tekt NTS-1 digital KIT is a unique, flexible, and easy DIY synthesizer that you can easily assemble yourself (tool included), without any soldering. The first of its kind from KORG’s DIY-focused Nu:Tekt brand, NTS-1 packs a powerful synth and multi-effects engine into a compact and highly portable form factor. Its DIY nature means it’s also very customizable. Explore the possibilities! NTS-1 is also completely compatible with the logue-SDK*, making it possible to create custom oscillators and effects or upload any of the content available for minilogue xd and prologue.
