Better choice than wheat.
I love making sourdough bread but am concerned with wheat being sprayed with chemicals. I read about the health benefits of spelt. The product was tightly wrapped in a two pack. I made my first loaf of bread and used a combination of wheat and spelt. It’s a heavier bread but has a great flavor. I will order again.

Great flavor and texture for breads
Lovely flavor and texture for a long fermented breads. I use while spelt and whole spelt combination (1:3 ratio white to whole) with at least 36-48 hours of fermentation time (warm and cold, emphasis on the long cold fermentation time).

Lacks flavor
The bread I made still tasted good but after using spelt from a couple of different mills now, I can say this one lacks that nutty bold smell and flavor. Spelt is more mild than other grains but a good quality spelt has a lovely flavor.
