Yes, the coarseness or fineness of your coffee grounds will depend on how long you hold down the button. There's not a specific setting. You'd just have to use you judgement. Grind longer for fine grinds and shorter if you like it more course.

Q: Can you grind flax seeds to fine powder in it?

I grind flax seeds in it all the time.

Q: Will this ground my vitamins?

I've only ever ground coffee beans, however I'm sure you can do vitamins as well. I really like that no clumps are left I get a fine powder each time I use the grinder.
