what size hole do you drill?

For 3/16” size you need to drill a 5/8” hole. 1/2” is too small and the wings will not pass through it.

How much weight do these support

Don't know that anyone can answer this question accurately then the company. These are solid supports, so I would think that the dry wall would give way before the support does, if it was used to support an extremely heavy object.

Will these Bolts be able to hold a pot rack on a wall with no stud?

These are about the best you can do without being in a stud. I have not used them for this, but they provide an extremely sturdy attachment.

I plan to use these to hang light curtains from the ceiling. Can someone tell me why these are so long? I'm just going through drywall.

You might be able to buy shorter ones. However, keep in mind that the spring device must fold onto the screw when you push it through the hole, before it expands on the other end.
