Q: does this come with a bag/sock for the board?

No. It does not. I bought a separate boardbag for mine.

Q: Can you change the fin configuration to the single fin with the three screw placement?

a single fin with the three screw placement (from perfect storm?) can be put on, but requires you creating a hole for the 3rd screw.

Q: Would this fit in a normal car with the back seats down?

Yes, an 8ft fits in a Toyota Corolla sedan so a 7ft should fit no problem!
