Q: Can you use food saver bags

Yes, but Foodsaver bags are overpriced. I buy my bags off ebay for far less. But any brand or unbranded vacuum bag works just fine. This is the best vacuum sealer I've ever owned! Had 3 Foodsavers and one of each of the most common sealers, all burnt out or needed unavailable parts sooner or later. My last Foodsaver I tried for 3 months to get a reply from customer service! ought this one, am impressed, can bag all day long one right after another!

Q: Can it seal wider bags than the heat bars by making 2 passes?

Yes it can. You might have to pull vacuum from a corner though. Bags are cheap, experiment a little.

Q: The product description says "Seal up 250+ times without stopping" but the text on the cover indicates a 15 sec break is required. Which is correct?

You will have some stopping point for the most part when you are sealing. I start with cutout pieces to size wanted then it goes very fast from there.
