Q: We accidentally threw the instructions away before reading them, so this might be a silly question. Can this go in the oven? Looks like it would melt.

This is not the type of thermometer that you leave in the oven with what ever your baking. With this type you have to open the oven once in a while and stick the probe in meatiest part to get the correct temp. After you get a reading you pull it out, turn it off and clean the metal probe, put it back in its sleeve and wait to use it again.

Q: Does it have an auto shutoff or a manual on off?

It will auto turn off if left alone for a little while Also has a manual shut off.

Q: How deep does the tip need to be inserted to get a valid reading?

To get the best reading I find it needs to be in the center of the meat or whatever you're cooking. For instance if I'm cooking a roast I put it in about half way and wait for the temperature to get to it's reading. Hope this helps.
