Fantastic cookbook at a bargain price!
This is a fantastic cookbook which includes several dozen Italian recipes I intend to try. The photography is terrific! I got a brand new copy of a classic which sold for $80 and I got it for $16. What a deal!

Outstanding! A tome of fundamental Italian cooking and technique.
This is by far the most comprehensive book of Italian cuisine avaiable in English to date. I own several books in English and Italian and this combines so much knowledge. I cannot even describe the amount of content in the book, its daunting. Giuliano Bugialli's Classic Technique of Italian cooking was probably the only book that came close to this level of instruction, however the content is dated and this is fresh! If you truly want to learn loads of Italian cooking technique and fundamental recipes from many regions, this is your book. It even has instructions on making pasta filata cheese (mozzarella) and ricotta. The only thing I can say that would deter someone from purchasing this book is that it is not for a "quick, I don't care" cook or someone who doesn't like to read or follow directions and learn new technique. Aside from that, I think it is worth its weight in gold.

This book is about the fundamentals. The basic. Is pretty good, simple to read and follow.Totally Recommended! Is a must!!

Loved that it is a text book & will teach me as I go along. Lots of info about raw ingredients & cheeses.Good basic recipes.

Good first book for someone approching Italian cuisine
I was looking for a book of cuisine techniques. Since I'm italian I choose this one to see how the recipes were made.In my opinion the book is good on the cuisine techniques, less good on the recipes, but as I all said before I live in Italy and I have all the original ingredients and know many of the recipes.
