Maaaybe;maaaybe not! I've had some on the shelf for months at a time and it's still moist and BeeDee (18 y.o. bearded dragon) stills runs to the dish for it. I don't know for sure, but I think it's soy based? It can dry out though, so keep the lid on tight.

Q: Does this come with a seal or just a lid?

Yes, has a seal if I remember correctly. Also put mine in fridge where it's stayed good. My beardie likes them just fine, we use as an occasional treat or when we run low on crickets.

Q: Can this be used as the sole source of protein for a juvenile bearded dragon?

One "sole" food source is probably insufficient for any growing child! Meal worms, super worms, even fresh veggies (lettuce, carrots, etc.) cut finely enough would suppliment a little dragon's diet. I believe this product is soy-based (?), so proceed with caution.
