Best Dried Cannellini Beans Brand
Camellia brand beans are repeatedly the best of the dried bean brands. They are a requirement for many meals around here - particularly my French Cassoulet. They cook up tender & creamy every time without getting mushy. Sometimes I'm able to find them locally, but when I can't it's Amazon to the rescue. Beans arrived with packaging intact, the one thing that can sometimes be dicey, but so far so good.

Great beans
We made Asturias Cannellini Bean and Spanish Chorizo soup! Delicious! Can’t find the beans in any of our grocery stores. Amazon rocks!

Cannelli Beans worth cooking
These beans in their dry state are hard to find in the grocery store. Even after soaking overnight, they took a long time to cook, but the consistency of the cooked bean was great. Canned ones are very mushy in the middle. These were not. For cooks at higher altitudes, FYI I'm at 5,360 and these took all afternoon on the stove to finally finish to the right texture. Cookbooks suggest they can be cooked, then frozen for future dishes. Saves big on time when you can pull them from the freezer instead of waiting all afternoon (or morning) as they stovetop cook!

Good, clean food
I am now cooking "clean", trying to avoid all the processing done to products that could be food but instead end up part human food/part animal feed.Reconstituting these cannellini beans is faster than some other beans, like kidney beans, so I use them in 3-bean salad as well as soups and stews. I do as instructed and soak them overnight in plenty of water in the fridge, then gently simmer them the next day until they're ready to eat. I don't cook them as much as some people might as we like them better with just a bit of firmness.
