This particular mat has a interesting design that's lined with little pyramid shapes, so that all the grease will collect at the bottom and your food won't be soaking in a pool of grease like they do on flat mats or pans. This also allows the food to get more crispy at the bottom, since the food is sitting atop the points of the pyramids, and heat can reach below the food. Another benefit is that it will cook the food more evenly from the bottom.You can cut the mat into the size you want, and you can use it to bake with, or a protective mat on the counter to prevent damage from hot pots and pans. It's also easy to clean with hot water and a bit of dish washing detergent. She's definitely going to be recommending it to her friends.
