I am so impressed with Amoretti’s Sweet Corn Extract! The flavor is incredibly authentic—sweet, fresh, and natural—just like real corn. I used this product to make low carb corndog mini muffins (with almond flour) for a woman friend on a special diet. She was amazed at how good they were and how much the corn extract fooled her tastebuds into thinking that she was eating mini corn dogs (in muffin form). She was very pleased, asked for a copy of the recipe, and is looking forward to our making them again I highly recommend this admittedly somewhat pricey but worthy product, which is not overly sweet like a similar item found on Amazon for less. Sometimes you DO get what you pay for.

Yes it’s quite expensive but for those doing the keto lifestyle it’s nearly indispensable. A few drops into a cooked mixture of HWC, almond milk, shredded cheddar cheese, salt and pepper and diced cauliflower and all you taste is cheese grits. Also works to flavor almond flour based breads and biscuits so what you experience is corn bread deliciousness. I always keep this in my spice pantry.

I got this to make a keto-friendly “cornbread” using almond flour instead of cornmeal. It definitely gives a sweet corn taste, but makes it taste too sweet for me. I wish I had gotten the popcorn flavor instead. It is ridiculously expensive, but a little goes a long way.

I have been following a ketogenic diet for the past 5 years. When I first began, recipes were limited and most, or at least many provided an opportunity to throw nasty food into the trash. As the Keto community has continued to grow, amazingly creative foodies have published acceptable to outstanding ketofied recipes for nearly any craving a person might have. I happened to order this corn flavoring with the intention of making a ketogenic version of tamales. This product proved to be an essential ingredient in the recipe - which turned out to be absolutely delicious and It made my almond flour and mozzarella cheese based masa taste exactly like it was fashioned from the traditional corn based recipe. I DID increase the amount to taste - the recipe called for 2 tsps. and I increased the amount to 3 tsps. - so well past the shoulder on the little bottle. Unfortunately, this stuff is rather pricey! I wonder WHY? Star rating - 5 stars for flavor, 1 or less for value - so overall 3 stars, even though it works like magic.

I live a keto lifestyle and up until now have not been having many substitutions for the old standard American diet food. I decided to try this Sweet Corn Extract to make something close to cornbread. This one product alone made a big difference. I used it in making Stufflers (with the Presto Stuffler) with a keto recipe using pork rinds and some other ingredients. It even smelled like cornbread was baking! I think this flavor is right on, excellent product!

Corn is very high in carbs, but using this as the major flavoring agent in a keto muffin or bread helps bring that wonderful cornbread flavor that I had been missing. I’m sure there are other ways to use it, but that’s how I use it. My signature muffin is made from almond flour, baking soda, egg whites, baking powder, xantham gum, nonfat milk, olive oil and this corn extract. I will usually mix in a few spoonfuls of mashed corn to further the appearance of a corn muffin, without adding too many extra calories or carbs. People seem to really like it.
