Are the bucket and hooks dishwasher safe?

Yes. The dough hook itself is stainless steel so nothing can hurt it. The bucket is dishwasher safe, but I recommend putting it on the top layer of your dishwasher because experience shows the color graphics on the bucket can fade if washed on the bottom rack. It says that it's a new design with a stainless steel dough hook, but is the whole top section that clamps to the bottom made of stainless also?

No. The 4 quart container is made of food grade high density polyethylene (plastic), and the top section (bridge and hand crank) are made of reinforced nylon (plastic). The dough hook was the 'weak link' in the original design, which is why that was converted to stainless steel. how much flour can the bucket hold?

Hi there! You can use most 3-5 cup (of flour) recipes. If you are using 100% whole wheat flour, you need to keep the recipe to 3 cups of flour. Thanks for your inquiry! Let us know if you have additional questions.

Is there any problem leaving the dough to rise in this machine? Then use machine to knock it down?

Thanks for your question. After mixing/kneading the ingredients and forming the dough, I recommend unscrewing the 2 side knobs that hold the mixing attachment to the container and removing the dough. I then lightly oil the container and return the dough to the container to let it rise in a warm spot with a towel or plastic wrap covering the container. You could just let it rise in the container with the mixing attachment still in place, but then you'd still need to remove those 2 side knobs and the mixing attachment after the dough rises. I think it's easier to separate the dough from the dough hook after mixing rather than after letting it rise....but it could be done either way. John Dmytriw, Owner/Operator EZ DOH
