I have 3 single controllers (had 2 pairs but missing a half). Trying to do 3 player but can’t figure out setting up using single controllers. Help?

You can’t. Each player needs a full paired controller

Can u play with 3 others on the same switch?

Yes, 4 players can play at same time BUT you need 4 complete controllers. So you will need to buy more controllers.
