Very High-Calorie, Spongy, Bland Chocolate Fudge Mug Cake; Must Make with Heavy Cream!
The Zone Perfect Keto Mug Cake was one of the most disappointing desserts I have had in a long time. Anyone who knows me will tell you that I can't live without chocolate. For me, chocolate is a food group. (So is wine, but we won't go there.) I was looking forward to some good chocolate. My mouth began salivating when I saw the words "chocolate fudge" on the box of Zone Perfect Keto Mug Cake. However, warning lights also began flashing when I saw "No Gluten." When a dessert is gluten free, then it is usually a hit or miss. It was definitely a miss with this one. According to the directions, one must use heavy cream to make the chocolate fudge mug cake. I'm on a diet. I don't keep heavy cream in my refrigerator. I wouldn't expect anyone who is on any type of diet to keep that high-fat product in their home. I did make the cake using a Keto friendly, low-calorie coffee creamer and low-fat milk. Both times, the cake was spongy, bland, and left a bad aftertaste in my mouth. I even added a teaspoon of all-natural, zero-calorie stevia to make it sweeter. It didn't help at all. Also, why do the directions state that one must add four tablespoons of heavy cream? Four tablespoons is equivalent to one-fourth of a cup. It would be easier to measure out one-fourth of a cup versus four tablespoons. Also, I microwaved the mug cake for only one minute. Sixty seconds to ninety seconds is a huge gap. I'm glad I only microwaved my mug cake for sixty seconds and I am also glad I covered it with a plastic shield. The mug's contents have a tendency to want to overflow from the mug like a grotesque version of the Blob. I recommend that if you choose to use this product, then you should make it with low-fat milk and add one or two teaspoons of stevia. The USE BY date is stamped on the bottom of each box. It reads as follows: USE BY 1APR2021. This is a very good date if you like this product and plan on actually using it. Also, these packets of chocolate fudge mug cake are very expensive. At the time of this review, one must pay forty George Washingtons for sixteen packets. That is ridiculous!

I will admit that I was surprised that a cake could be mixed and cooked in minutes. And, all inside a 16 oz mug!!Well, while it's truly amazing, and the end result was tasty, I had some issues.Now, I have to confess that I am not on a keto diet. I just watch the calories and I minimize certain aspects, like cholesterol, saturated fats, sodium and sugars. I am not sure how these aspects factor into a keto diet, but I have concerns about this nutritional data provided regarding this product.Without any additions, the packet alone contains 2.5g saturated fat, 150mg cholesterol, 300mg sodium, 16g carbs. Granted it's a cake, but I will admit I was taken aback by those numbers. Forget about the numbers if you add the 4 tablespoons of heavy cream to the mix.Still, intrigued by the mug cake concept, i altered the recipe. I soaked some chia seeds in almond cashew milk, which thickened the liquid. I slowly and gradually added this liquid to the mix in a medium large bowl, and mixed well. I stopped adding liquid when there was no clumps or powder evident. Instead of putting into a mug, I spooned it into a silicone mold, trying to fully fill the cavity, with a little top space. Similar to using silicone molds to make cupcakes or brownies. Since this would be smaller than the 16 oz mug, I figured it would not take as long, so I microwaved it for 40 seconds. Toothpick test. another 10 seconds. Then let it sit there for a minute or two. Removed the mold, and placed it upside down on a cookie cooling rack. It worked!!! Nice lemony flavored cake. It was a bit chewy and the outside edges were harder, but that was due to my choice of using the silicone mold. A mug would have cooked differently. However, I like using the silicone mold, which gives a nice design to the mini-cakes. And, using my changes, it was 'healthier' than the nutritional data for the mix with heavy cream.I do like the convenience and the fact it has 12g protein, 3g fiber and 1g sugars (6g erythritol, though) and only 200 calories per pack. My addition of chia/almond cashew milk adds nutritional benefits, with low additions of calories and fat. So, using my silicone mold, I was able to make 8 smallish mini-cakes, approximately 2oz each. So consider that makes each mini-cake about 25 calories and correspondingly lower ratios of fat,sodium,cholesterol.But, i'm sure you're reading the review to judge the cake mix. Well, the taste has a nice lemon zest, and the texture was fine (even though i did not follow their instructions). Cooking a cake in the microwave in under a minute was remarkable (your mileage will vary based on power of microwave , ingredients used and choice of mug or silicone molds). I appreciate the use of almond flour. I will admit to not understanding the keto math of 16g total carbs - 3 fibers - 6 erythritol = 7g net carbs. However, 7g net carbs for approximately 16oz cake is not shabyy (something anyone watching blood sugars would take note).So, bottom line: would i make these cakes again? Yes. I would even search out different flavors. Or I'd experiment adding flavors or ingredients (seeds, chopped nuts, fruit). I can see a situation where unexpected visitors arrive, and you want to do something special...well making cakes in minutes is pretty special. haha.The mug cake mix worked, and matched the description and depictions in the product details. I feel it is worth a solid 4 star rating. If you try my approach, I hope it works and alleviates any guilty pleassures. :)
