Wow. Awesome Flavor!!
Package was intact and well sealed (re other reviewers comments)100% Whole wheat bread made from this product is the best tasting whole wheat bread I’ve eaten since I was a kid.That is saying a lot. It was long ago in better times when food tasted like it was real.Warning for bread machine owners. DO NOT use added/recommended amount gluten powder without an abundance of caution. This flour seems to have plenty. I think I came close to blowing mine up. It’s a big Zojirushi and soldered on, struggling to “dough mode” completion. If you have a smaller machine the strain of very tough dough might break the kneading blade(s) or damage the motor. So experiment a bit and/add unbleached or all purpose flour to temper the level of dough elasticity, and reduce any added gluten.Btw. I don’t really bake. Occasionally, when we have a “Supermoon” and/or the planets align as they did April 13,14 and 15th, we’ll drag out the big gun and make (try to make) bread. So take the suggestions lightly.And now, as we are hunkering down for the Covid19 duration, everyone on my newsfeed is cooking, baking and eating like never before. Recipe sharing, food art, schooling in food science, etc etc. If you find you are producing a lot of meals, cookies, meatloaf or awesome whole wheat bread, make some extra for your local food bank or your closest family shelter. Absolutely delicious, distinctive flavor and texture, bakes beautifully, real find at the price
I've been baking all my bread etc. for about 5/6 years, but I've also been moving across countries and hadn't settled on any favorite brands. Secretly I think I've been a bit homesick for native, if not 'ancient' then not very 'developed' grains, that are ground up in small local mills in India. I don't have a strong anti-GMO preference, but I miss the earthy, strong flavors, 'nuttiness', roughage and fibre content. In India that kind of flour doesn't get used in Western-style yeasted and leavened bread.Unless prices have changed a lot when/where you're reading this, my 10-lb bag was a real steal for the quality. I was very attracted to Homestead Gristmill's story, and super curious about 'whole red wheat'. Well, as soon as I opened the bag, I was smitten. It smells SO GOOD - it smells sort of sweet and malted, or like honey, very nutty and fragrant. I do have a bit of prior experience with baking 100% whole wheat breads, and with just a few adjustments for the degree of roughness, this has been turning out beautiful, airy, very soft loaves and buns (yeasted, but with no eggs or similar binding, and no oil/fat). The scent/flavor is definitely not my imagination (or added in the bag, hahaha) because everyone who's tried the bread has commented on it. Many recipes for 100% whole wheat advise loads of maple syrup or honey to balance the "bitterness" of unrefined flour - I haven't found it necessary with this.Highly recommend!

Top notch quality product and owner
After reading the reviews for the 10# size and noting some concerns about the quality of shipping, I contacted the seller, and was reassured the packing had been improved.It certainly has! The beautifully milled wheat is vacuumed packed in a heavy plastic bag, wrapped in big bubble wrap, and then shipped in a heavy duty cardboard box. It arrived five days earlier than the expected date.As mentioned, the whole red wheat flour is beautiful. It has a fair amount of fine bran, but not coarse (like some of the Irish coarse wheatmeals). It has a fresh fragrance and a fairly soft feel, and I would feel comfortable subbing in 25% to start in most recipes calling for all AP. A bit more hydration might be needed.This is one of the nicest hard whole wheat flours I’ve purchased. It’s more expensive than prepackaged standard ww, but I feel I’ve gotten a heritage product, naturally processed.I will store this in the freezer and bring to room temp before baking with it to extend its freshness.

Great product, bad shipping container
I want to give this product a rave review. The flour is everything I want in a bread flour. I use it in combination with strong white flour to make sourdough loaves. I also very much support the craft community which markets this flour. These are really good people! I did want to make mention, however, that, like some others who opened the box to find flour all over the place, I was unhappy to find the plastic bag inside an otherwise undamaged box was ripped in several places. My wife and I managed to scoop it into gallon plastic bags for storage in the fridge. This will not prevent me from ordering again, but . . . . Please do something about the shipping container.

I guess I just got lucky
I guess I just got lucky in that my flour arrived intact in a large ziplock type bag, some of the other reviewers noted their bags had opened in transit. That did not happen to me. I have baked 4 loaves so far which were all delicious. I've been using this flour the same as I would any whole wheat flour. I am very happy with the product. During the Covid19 crises flour has been hard to find. I wasn't sure when I bought it how "red" wheat flour would differ from the Trader Joe's white whole wheat or King Arthur flours - turns out I could substitute this into any of my normal bread recipes and get very enjoyable rustic artisan type loaves

Not finely ground, almost like saw dust consistency
My bag came intact, it’s a thick clear plastic bag sealed and additional zip locked for after opening. I was surprised to see the flour is not very finely ground (looks almost like saw dust!) compared to whole grain flour I usually get at my local millery (which is like a powder). The banana bread muffins I made fell apart once cut into and are dry. Not a real fan of it, may need to find other recipes to finish off this bag with, hopefully with better results. If the seller has suggestions.....
