Freshwater Fishes of New York

Although I have only pulled it out to help a fellow fisherman identify a fish he's never caught before, I love this little laminated pamphlet. The only thing I'd add would be stickers to put on the ones it's illegal to catch or something. Instead I have the pamphlet and a tiny notebook in my kit, plus a DEC app on my phone.
