Stays Really Sharp a Long Time... Mind Use Instructions, as the Ceramic is Brittle!
We have several of the Kyocera Ceramic knives. They all stay sharp an incredibly long time. Be mindful of the instructions. The ceramic blade is very hard, and therefore quite brittle. It is great for slicing boneless meats, vegetables, fruit. Do not use if you'll need to apply twisting forces to the knife, or slicing around bones. My wife was boning some chops with one, and hit a bone, taking a bit of a chunk out of the blade. But if used for what they are meant for, making quick work of boneless meats or vegetables, they make the work quick and easy. They also stay incredibly sharp! We have a Kyocera Chef's knife we have had for 4 years, which is nearly as sharp as when it was new. You'll still need to keep steel knives around for tasks like cutting up a chicken, or deboning meats.

Razor sharp, stronger than average ceramic, nice attention to detail.
Compared to an inexpensive generic brand black ceramic knife of similar description:Significantly sharper -- the other knife cut like a very sharp knife. This one cuts like a razor blade. My kitchen-ninja mother-in-law remarked how I had just accidentally cut the apple stem in half when I cut the apple. It does this almost every time I cut apples or pears and after a while had I just forgotten that it was remarkable.Stronger, but still brittle -- I tapped it on the counter a bunch of times and no ill effects were present. After a year of use a rather large chip appeared on the blade, which I was pretty sure they would have a hard time sharpening out. I just bought a replacement instead.Dull tip and end -- I find this *very useful* when dicing avocado or mango in the shell in my hand as otherwise it's very hard to do this without slicing through the skin with such a sharp knife. I also found it less prone to catching on the cutting board.Nice texture -- I prefer the slight texturing to the blade on this knife vs. the glossy smooth generic knife, which tended to have more food stick to it. To be honest the other one looked a bit nicer (mirror polish) but this one is more practical and still handsome in a carbon-fiber kind of way.

be aware: they break or chip really easily
they are at first beautiful knives staying sharp, then they would chip! I have ve had two of them for a year , pieces chipped off the top and gouged out of the middle of the blades . I even tried replacing them, at a small kitchen store ,thinking maybe they were knock offs, same thing broken basically useless knives . its useless to have to treat them with kid gloves... and even when you do they chip away. SO. i can not reccommend these very exspensive knives.

Produto muito bom, já tinha duas facas da marca compradas no exterior, mas não tinha o tamanho, é ótimo para cortar legumes, frutas e etc.... a única coisa que evito são itens mais duros porque a faca é muito sensivel.
