Q: How is this useful as a artificial sweetener? It has dextrose and maltodextrin both of which cause a sharp increase, or spike, in blood sugar level.

The dextrose and maltodextrin are in very small quantities! I do not think that the mg amount of either of these sugars is going to cause any problem with your blood sugars. The total amount in the packet is under 1 gram and the calories are listed as ZERO!
