Technical book for chefs
This is written for chefs and culinary arts students, not the general public. But if you want to know all about charcuterie and other aspects of garde manger, it's a great resource (although I'm pretty sure this edition is out of print now)

Perfect condition! Not a single mark looks brand new. Do not waste your time ordering a higher price version mine was in mint condition.Wonderful book! I am a professional chef who attend Le Cordon Bleu but we did not use this particular text book. As with all LCB text the recipes have been tested over and over by students and chefs alike. I would also recommend You Eat with Your Eyes by Chef Edward Leonard. He is a Master Chef and is an amazing culinarian. Easy step by step directions and pictures makes this book a must have for your culinary library.Bonne chance!BLDUCK

Modern Garde Manger
The book came very fast & it was as it said brand new & still in the wrapper. The packaging on the outside probably could have been better other than that I was very satisfied.

I fell in love with Garde Manger during Culinary School. This cookbook is priceless with it's detailed history, descriptions, pictures and recipes. I use it all the time at the Restaurant where I manage and am a Chef.

Great direction
Great recipes with step by step instruction and pictures so you achieve the look you are striving for. Try the Chow Chow Pickled! They are amazing!

Good Book
The book is good. It has information about tallow sculpting, ice carving, and other kinds of information related to Garde Manger classes. I do recommend the book. This is definetly the place to buy it at!
