All of it is fully cooked but it cruches every bones. We got a paste at the end. On that video I put 8 leg quarters but as we went (it’s been 6 months) I can do 10 leg quarters with a quart of water! I make organic vegan/vegetarian pudding for a living and this does everything my 7500s do but with 3x the efficiency and a 10th of the time. The XL's 1.5gal container is enormous, not a 30l but huge. The blades cook just like the 7500, may take a few minutes longer due to the quantity of food blened, but just as well. The motor takes all the load I give even on a 15amp breaker, no problem. I would get two batches done and the 7500, over heats and shuts down, with less than 1/3rd the product. The XL takes all I throw at it with ease. The XL is nit cheap, however, it IS Vitamix quality. All I can say is those dissapointed aren't using the machine correctly, I guess? I own several Vitamix blenders and the quality and power of the small ones beat this one by A LOT.
