Review: I can't think of a headline, but desertcart wants me to use one for my review of the steel pizza sheet... - I tried both the stone and the steel pizza baking sheets. And I think this is far superior. I make my pizza from scratch (using 00 flour, fresh mozzerella etc), and the trick to good pizza (besides using 00 flour) is the heat for both the bottom and top of the pizza. While I haven't actually measured the temperature, it seems like the steel conducts the heat better and cooks the crust more evenly than the stone. My crust came out crispy and chewy and close to the ones you find at the local pizzeria. I was raised on New York style pizza, so anyone questioning my pizza credentials will get a punch right in the mouth! And I can't stress enough if you want to make pizza from scratch, buy the 00 flour (you can find it on desertcart too), as that's the secret to the crust. If you use regular flour, then you're really not making pizza..you're making crispy flat bread with tomato and cheese on top. So if you just remember one thing from this review, it's 00 flour..got it?

**Q: Does it twist in the oven at high heat?**
A: Mine has been in my oven since the day I bought it-still flat as a pancake.  Love this thing!

**Q: Can you use an aluminum pizza peel with the baking steel without harming the baking steel?**
A: I have an aluminum peel with wood handle and use it to slide my pizza or bread dough from peel to steel and visa versa.  The baking steel can get some scratches from use but it has no effect on the sheet as it is only cosmetic.

**Q: Cooking Method on Grill -  preheated steel on gas grill (around 425) The crust was brunt black. is there a better way?  It was still good but charred?**
A: Try taking half as long to preheat as you did before... so if you preheated for 30 minutes then try 10-15.  You can always climb up to temp but if its too hot at the start then your food will burn too fast.  Also, try placing on indirect heat (the cooler side of your grill). Steel will still soak up and retain the heat but at a slower rate for more control.  Good luck!  Enjoy!

**Q: How does one clean this steel sheet.  I've been using just water but notice it stains and rusts easily.**
A: A properly seasoned steel will discolor and darken like a week seasoned cast iron or carbon steel pan. It will not be bright and shiny steel but it absolutely should not rust. If you get any rust wash with soap and water, scour with steel wool we down with canola oil (flax oil is even better but harder to find) then bake @400 degrees for one hour then turn off the oven and allow to cool in the oven. After this it should be a uniform color depending on the kind of steel range from a golden straw to maybe something a little bluish. If you'd like you can repeat the process for Extra Protection. Now after you scrape off anything stuck to it wife down with warm water and then immediately dry it and then heat it in the oven to evaporate in any water that remains on it preventing rust.

Finished cooking a partially cooked Regina's pizza on it as soon as it arrived. Came out great. Set the oven on 500 for 30 min. Pizza was done in 7 min. Piping hot, bubbling and the dough was still a little chewy. Perfect. Haven't cooked my own dough yet, but looking forward to it! Mangia!

It works well for crisping up pizza and rolls but stains very easily . I had an old pizza stone that stained too but did not expect the pizza steel to stain too. Very expensive for what it is. Would not recommend.
