Balanced knife that holds an edge well
A perfectly balanced carving knife that fits my hand well. The longer length fits my needs well and it isn't hard to control. Some may think it's on the heavy side but the weight allows you to drag the knife over the meat without any real pressure and make a perfect cut. It arrived very sharp and cut well during the first use. I then polished the edge on a 10,000 grit wet stone and it took the edge well. I use this for slicing meat only, raw or cooked with no bone contact, and it has held an edge very well. I think better than several Henckels or Wusthof I have. Definitely a nice knife at a fair price.

Excellent knife
The knife is made well and has a fabulous edge. It cut beautifully and let me slice through anything. I made extremely thin slices. I feel it was worth the price I paid.

Great knife, it isn't a fan of fish bones with original edge, but once you get it to your sharpening angle it's unbelievably durable

I was looking around Amazon for a fish slicing knife and I happened upon the Yoshihiro Inox Stain-resistant Aus-10 Steel Ice Hardened Sujihiki Slicer Chefs Knife, 9.5 inch. After researching it and several others, I made the calculated determination that this was the knife for me. On this rare occasion, I chose correctly. It was packaged superbly, and right out of the box a dream to use. I had a two pound, center-cut piece of Opah (Ono) that needed to be cut into proper portions. After, handling the knife for a few minutes to get the feel of it in my hand, I figured out where the cuts would be I made the first one. The only way to describe the experience accurately is to say that I felt as if I wasn't cutting anything, merely drawing a line on my cutting board with the blade. There was absolutely NO resistance whatsoever. The knife went through the fish as if it wasn't there. Can't ask for more than that. Nor will I.
