Do these have a gasket inside? And if so, can the gasket be taken out? I just need some dry storage lids for salt, coffee, etc.

No gasket inside. I’m a beekeeper I prefer these lids for my honey jars to the regular mason jar lids. I also use them on mason jars for storage. They work great!

what is the max temp for these lids?

They have the same temp levels as any nylon type food grade product. I would not put them anywhere that would be close to boiling temps, under a broiler or in the oven. They are fine in the dishwasher, but not with the heated dry cycle.

How many ounces does it hold?

It's not how many ounces. Fits regular mouth mason jars and other jars with 70mm openings size. Fits any size of regular-mouth mason jars.

Are these heat resistant - for canning and in a pressure cooker for 30 minutes or an hour ?

Canning? No. Will not seal. But Pressure cooking to sterilize? Absolutely. Put them through 90 minute cycle many times
