Q: what size table legs (not length) does it hold securely?

Mine are 2 inches by 1 7/16 inches and they work fine. The 1 7/16 inch side fits inside the table hinge when it is folded up.

Q: Are these suitable for legs on a folding outfeed table for my table saw?

They work well on a folding table for my sailboat.

Q: How much weight will they hold. For instance, could I make a fold down chair. Would it support an average sized male?

not real sure - probably not more than 35lbs or more if they are not screwed into a solid stud. If in a solid piece they will definitely hold a lot more weight.

Q: So there isn't a left and a right? The unlocking mechanism (button/latch) is on the same side of every bracket? Thanks in advance!!

Locks on both sides, latch only on one side.
