Absolutely fantastic product
I need more please. The taste and texture is exceptional. I put some on a triscuit with some goat cheese and I had to stop myself from eating the whole jar. I hope this comes back in stock soon.

Apparently, I bought the 3 remaining bottles from this vendor, and for that I am sorry. Last week I bought a bottle to try and it was truly, one of the most amazing flavor, coupled with the perfect caviar-like texture, that my palate has encountered in this lifetime. Hence, I had to buy the remaining bottles. At this price point and for the experience, it is a steal. If one thinks this is an exaggeration: (1) this is my first ever Amazon review, and (2) try it.

Not very much truffle flavor
I have been looking for a good way to get black truffle flavor in scrambled eggs, and fresh truffles aren't sold where I live so I have tried a range of alternatives, including this.The product consists of alginate jelly 'pearls' around the size of caviar in a very small amount of liquid, just enough the keep them moist. The manufacturer's website explain these pearls are the results of the process of spherification, so each pearl should have a skin enclosing a drop of truffle liquid.Unfortunately this isn't the case with my jar. The alginate spheres are solid gel, and the truffle liquid is more a marinade for these gel spheres, which don't taste very strongly at all.In short, they make a nice dish presentation, but the dish might need some help with truffle flavor - which is stronger in sliced truffles in oil, or a good truffle powder.
