When writing, are the pen strokes loud?

Just as load as a pencil on paper I would say. I will say that the texture does a number on the pencil nibs. They will wear down quickly.

Can I put this on top of a protective temper glass screen protector?

Yes, you should put this over your existing screen protector. This film is thin, it won't protect your iPad, and yes it will work with 2 layers.

How do I take it off?

It could b removed with a exacto knife or sharp object, or even with your fingernails
