I've used the guanciale to make Pasta Amatriciana with red and white sauces (ciao e pepe) and it's delicious. One difference between making your own sauce and the sauces we had in Italy is that we get a lot more guanciale per portion and it's crispier... yummy!

Much less expensive
If you live in NY, you can find it at the Grand Central market for $18.99/LB, it is vacuum packed and it is great!!

Not a great buy..........only order if you can not get anywhere any less expensive......nothing to write home about!
