Like a good cast iron skillet, a proofing basket has to be seasoned before use. Each time before you invert the dough into your proofing basket, dust the basket thoroughly with flour, then shake out the excess. You have to find the right balance of flour: too much will cover up the spiral on your crust and too little will cause the loaf to stick to the surface of the basket. Dust the surface of the dough also before placing it in the basket. Proofing baskets get better over time, due to the seasoning on the surface. So it’s not necessary to thoroughly wash the basket after each use. Just lightly brush off the basket to remove bits of dough. If you get flour or dough buildup, scrub the basket in cool water and leave it to dry in the sun. Note: a home baker may never have to wash their proofing basket at all. Has been turning out beautiful bread weekly for 3 months
I picked up bread baking as a hobby this past year, and got this banneton to help me proof my boules. I've used this basket to churn out a loaf each week over the last 3 months. I've used it with and without the liner. Overall, I'm pretty happy with it. I've tried proofing in a regular towel lined bowl, and I've noticed that those loaves come out a little more flat in shape. Using this banneton gets me a rounder loaf and creates that nice exterior flour spiral when I skip the liner. I have since picked up a second banneton from a different seller that had many more reviews, and I would say that the baskets are pretty similar. The linen liner is perhaps a little more thick with this basket. In general, use the liner if you're using a high hydration dough or if you're going to overnight cold proof (such as with Tartine Country Bread). It will stick to the basket otherwise. You can minimize sticking by flouring the basket with a 50/50 rice flour and all purpose flour mix.The basket itself is fine. At the end of the day, that's the most important part. The lame is pretty cheap and doesn't hold up very well. It rusted on me after my first use and wash. I hoped that something designed for the kitchen would be a little more resistant to rust. Get this if you're in it for the basket. Accept that the lame is pretty much disposable and won't last you too long. This basket didn't come with a scraper when I got it, so can't comment on the quality of it.

Great bread basket
The bread bakes so professional looking. The basket is also easy to clean and seems good quality.The scoring knife that was included was easy to handle and use for scoring without any issues

Light and strong
Great .... Good build quality. The scraper it comes with is excellent, Fun for larger basket, and it is good quality than what used before, the green lame is perfect also.

And the bowl scraper is great. The scoring blade isn't very sharp though, I don't use it.

Nice dough bowel
Enjoying this addition to my growing banneton collection. The depth to width ratio is perfect for the size/shape I like in my boules, and I love the dough scraper that came with it! Much more functional for removing dough from its container than others I’ve used. And I like the green lame also. For the first time I feel that the basket consists of natural materials.I like it.

Great for bread rounds
Making a rustic bread boule with this banneton is easy and results in great looking boules. It is good for loaves between 1 lbs and 1.5 lbs.
