I ordered twice, and each time the product doesn’t say gluten free across the front. did red star change the packaging? i have celiac.

This particular item is not gluten free. Red star does make a gluten free variation, you may have to search for that one specifically.

I would also like to know the answer to the question about the weight! Is it 20.25 oz or 6.75? Thank you!

I did not get 20.25oz, I got 6.75oz. My package consisted of 9 pieces. Each piece is actually 3 individual packs of .25oz (7g) each - that's .75oz (21g) per piece. So since I got 9 pieces, that's 6.75oz (189g) total. I have no idea where the 20.25 comes from, other than someone didn't use their calculator! lol

This is a quick yeast that can be added directly to dough recipes. Unless you are making a "starter" (such as poolish or biga), dough rise time is as typical with 45-90 minute proofing/doubling.

What's the best way to store this for a long time? i don't make bread a lot but when i do i need to make many loafs at once. thanks.

I store my Red Star Quick Rise Yeast inside a cabinet at room temperature, often for many months, and it always works just fine. Of course, I always use it before the expiration date that is printed on the packets. Also, I have read online that the best way to store yeast packets is to refrigerate them - NOT freeze them - but I’ve never tried that.
