Suggested Use: 1 3/4 cups dry mix 1/4 cup whole milk 1/4 cup unsalted butter, melted 2 large eggs 1 cup extra extra sharp cheddar cheese, grated Baking Directions Preheat oven to 350 degrees F. Place dry ingredients in bowl. Set aside. With a paper towel, carefully spread a little melted butter around the insides of each well of a mini-muffin pan. Wipe the excess drips off the top of the pan so the butter will not burn on your pan when baking. Add eggs, milk and butter to the dry mix. Stir to completely combine. Add cheese to mix. Stir to combine. Using a 1-tablespoon measuring spoon, pour mix into each well of mini-muffin pan, filling each well to the top. Use your mini silicone spatula to get all the mix from the bowl and to move any drips on the top of the muffin pan into the muffin well. If you are using a silicone muffin pan, utilize your pizza peel to move it successfully from the countertop to the oven. Silicon mini-muffin bake for 24 minutes. Metal mini-muffin pan bake for 20 minutes. Bake until puffy and golden. Remove from oven and let cool in the pan for 5 minutes. Serve warm or room temperature. Recipe will make 24 mini-muffins.
