Please tell me why the shipping weight is 14.4 oz but the advertised amount of product says 16 oz or 1 lb ?

What are the benefit of agar agar. ?

We use it as a thickener for vegan cheese. This one is so nasty tasting we chucked it and bought some for way less money at the oriental supermart. Telephone brand is the one u want!

What is the shelf life?

I have never noticed a shelf life date for Agar Agar. But, what i can contribute is that i have been Vegan for many years and have always used Vegan Agar Agar for various food preparations. What i've done to maintain it is two things 1) keep a handy amount in a glass McCormick bottle with a Shaker top, and 2) to avoid depleting the shaker jar for more demanding preparations, i would use what i needed and resecure the original package by carefully closing it back while releasing as much air as possible and then storing it in a tough ziplock (not slidder lock) bag... freezer bags are tougher than regular storage bags, and Hefty is toughest of them all in my opinion. ...hope this helps ;)
