These single-estate beans show bright notes of red cherries, currants and a pleasant fermented character reminiscent of red wine when assessed dry. As hot water unfolds more aromas, black pepper, toast and citrus layer on the nose with fully realized aromas of red fruit and wine. With a light-to-medium roast, the early palate shows a very bright, full-bodied cup. Despite crisp red fruits on the mid-palate, this coffee remains low-acid and round in texture, with minimal bitterness and persistent aromatics that continue to blossom even after cooling. These beans originate from a single estate in the mountains outside Jarabacoa, a region that boasts one of the globe's most temperate climates. The estate's stewards are an extraordinarily socially and ecologically conscious family who, for example, use fermented coffee cherries to create natural gas to power the estate's operations; and donate books and computers to local schools. In a more rural area, they even underwrote and built a new school to prevent young children from having to walk the prohibitive 15 kilometers each way to attend school. They also routinely help Haitians obtain legal residence in the Dominican Republic in order to make fair wages. Their exceptional care of the environment, care for local Haitian immigrants and high cupping scores make this producer stand out among their peers.
