I like this series of books!
I have several of these river cottage books and I have found them all to be informative. I like that the people writing aren’t HFW - not that I have anything against him I have a could of his river cottage books and I find them very good - but he does have good experts on hand and they provide a good background TU each subject. This one like the bread book I reviewed goes into the science behind the cheese making, including the make up of different types of milk. I am so tempted to now have a go at making something simple like labne. It’s useful as well if you have people in your life who are food intolerant so you can perhaps find alternatives for them (not me I eat anything me!). There are some good recipes as well.

A lot of filler in the book
An attractive book that fits nicely with the rest of the collection. However there's a lot of filler and bloat in it. I was hoping for more of a focus on cheese recipes and in particular more interesting hard cheeses that are less readily available elsewhere, but instead the book has a large section on recipes with cheese which is disappointing!

Another Great Book from Stephen Lamb
Another Great Book from Stephen Lamb. From the basics of milks to making your own dairy products. Well explained with a true passion from a very dedicated author and tutor who truly knows his stuff. A great follow on from the Curing and Smoking. Thank you Steve

Extremely easy to understand cheese making.
I love this book, and have all the other handbooks from River Cottage. This is one I’ve been waiting for as I make cheese and this is a great addition to my other books on cheese making.I really hope that they bring one out about Bee Keeping.

Not much in here
For a book on how to make cheese there are very few recipes in here and none of them were cheddar. Which was one I expected to see. There are other books out there that are cheaper and have several methods of making cheddar and several blue cheese recipes made from different types and compositions of milk (Making Your Own Cheese: How to Make All Kinds of Cheeses in Your Own Home by Paul Peacock).
