Q: Expiration date is August 2013, Can it still be used for freezer jam

I have only used Sure-Jell pectin, and I am not sure I have ever paid attention to the expiration dates. But, I do know that sugars and salts have shelf lives of 20 to 30 years if not longer. Pectin may have a much shorter shelf life, I would try to research the shelf life of pectin on maybe Martha Stewart or just google it to see what they say.

Q: What is the expiration date on the pack that will ship?

Hi I've never used liquid pectin, but it probably works the same as powdered, since cooking time is the most important factor

Q: Can you make jello like consistency with this if yes at what proportion? Can it be used as gelatin substitute?

I believe you also need sugar and maybe weak acid to make it set. The only experience I have is making mint jelly. It uses 2 1/4 c water, 1/c strained lemon juice, 3 1/2 cups of sugar and 1/2 bottle of liquid pectin (6-oz size). If you like, I can send you the whole receipe. I'm pretty sure you could use lots of different fruits to make something good. You could look at the Certo website, and also there are probably some directions included with the pectin bottle.
