Very bitter
I have been aware of amaranth since the late 1970s, when "natural" and "healthy" foods began to be marketed as an alternative to mass-produced foods with additives.While I appreciate the nutritional and health values that amaranth offers as an alternative grain, I am having the same issues with it as I did fifty years ago. The primary problem is that I find amaranth to be very bitter, which is not a characteristic commonly found in many other alternative grains or flours. I am extremely gluten intolerant, and as a food scientist and chef, I have utilized many wheat and barley alternatives, including rice, tapioca, mung bean, and potato flours.This may be a personal preference; I don't like many bitter foods, particularly those I'm not expecting to be bitter.If you are also sensitive to bitterness, amaranth could be a good partial replacement for other flours, especially in highly flavored products, e.g., chocolate fudge cake or a creamy curry lamb dish.

Good alternative
This has performed well as an alternative in baking and thickening. Consistency is good thus far as a base. I will update after further use.
