A deep dive into authentic Italian cooking by an Italian food expert
Autentico is a deep dive into the world of Italian cooking by Italian food importer and expert Rolando Beramendi. The book starts off with a tour of essential Italian pantry ingredients, not just the ones to have, but how to find the best and the most authentic among them, including resources of where to buy. Recipes are divided into courses (“To Begin With” “Now, For a First Course”) to give additional context and guide you through the progression of a typical Italian menu.Autentico is equal parts serious and fun, with playfulness mixed throughout (Artichokes with a Hard-On, anyone?), and will make any person seeking deeper food knowledge rich with Italian food wisdom. The stunning photography will either make you hungry, invoke a deep longing to visit Italy, or make you look twice (there are some graphic but beautiful images of meat and fish in various states of butchering.) Most likely it will do all three, and have you flipping the pages again and again looking to discover more.Of the recipes I’ve tried I’m running back to these to make again: Sweet-and-Sour Onions, Steamed Potatoes with Onions and Capers, and the Sausages with Lentils.Buy a book for yourself, plus one for everybody in your life you lives to eat well! They'll love this book.

A true celebration of Italy’s finest ingredients
Rolando’s recipes are the epitome of celebrating Italian ingredients in their simplest, most delicious form. This book is about the ingredients not the recipes. Their flavors shine through in each and every recipe. Rolando ever so delicately finds a way to display Italy’s finest in easy to make not over complicated dishes. I couldn’t think of better description than Authentic. A true masterpiece for discovering Italian cuisine. The photos are gorgeous and the format is perfect for beginners, to the most experienced chefs. The curated combination of recipes, photos and stories is with out a doubt the best cookbook I have ever bought. After reading cover to cover, I plan to gift all my friends and family for Xmas. I will patiently be waiting for book number 2!

Authentic Tuscan Cooking
I love the recipes and instructions that tell you how something should look or smell and the reasons why. His Soffrito is amazing and great to have on hand for more dishes than Ragu ( I recently saw a recipe in Food and Wine calling for Soffrito in a Cuban black bean recipe)Speaking of Ragu.....his is the best I have ever tasted. DO purchase the olive oils he prescribes as they are essential. I like a bit more salt and garlic in my dishes than the recipes call for. Taste and cook. Let the Ragu rest overnight if you have time for even better flavors

... am the kind of person who often reads cookbooks like novels.
I am the kind of person who often reads cookbooks like novels...cover to cover. And since I am of Italian heritage, I love reading the recipes and stories from Italian cookbooks. This book has both great recipes and great little stories about the foods and the ingredients and I am anxious to try so many of them. I gave this 4 stars instead of five for two reasons. Some of the recipes don't show the ingredients or servings accurately so it's hard to plan and adjust. (e.g. sausages w/lentils and kale show 5 sausages in the picture, 4 in the ingredient list and says serves 6-8). But my bigger problem is for the recipe for Pantelleria style slow braised tuna on page 269. The directions say to cook it slowly and long in the oven for 20-30 minutes but nowhere in the recipe is there an oven temperature. I'm not sure if anyone has tried to cook this and can provide a temperature at which this works, but I would love to know what that is as this is one I really want to try.

Keeps on giving great recipes
Without doubt, this is one of the best Italian cookbooks in the market. At least so far, all recipes I tried worked out well. And it’s well worth paying attention to the details of the recipes (for example, Broiled Asparagus, My Way, is definitively better with lemon-infused olive oil than with standard olive oil). The wine recommendations are also great.

Truly authentic in every way - great addition to any coffee table.
Beautiful photographs and fantastic recipes. I bought this for my boyfriend who is ... not so great at cooking. I believed the reason he was not-so-great was due to the fact that he didn't feel connected to the recipes. With this book he has read about the history behind certain dishes and it has sparked his creativity in the kitchen. This is a gorgeous coffee table reader, I'm always sure to leave it out when guests are over and everyone loves flipping through it!

Stand-out Italian cookbook
There are so many new Italian cookbooks these days that it takes something very special for one to stand out from the crowd. This one certainly does! Beautifully written and beautifully photographed it has quickly become one of my go-to books for inspiration. I think it helps that Rolando has an international perspective on his home cuisine and I love the way he writes, as much as I love his take on the recipes he includes here. Can’t wait until he produces another volume!
